Most people never forget their first visit to a Champagne cellar, thanks to the impressive sight of huge walls of bottles stacked high as the wines inside go through their secondary fermentation. I’ve seen a lot of wine en tirage, but I continue to be impressed at the amount of work involved in stacking and unstacking so many bottles, and the potential for catastrophe that they seem to offer.
