New Releases from South Africa’s Tokara Winery

Located on the crest of the Helshoogte pass outside Stellenbosch, Tokara is one of South Africa’s most beautiful wineries with views of mountain vineyards from its tasting room.  Established in the early 1990s by financier GT Ferreira, Tokara cultivates 62 hectares on its home property and another 25 ha on Elgin’s Kogelberg Mountain Range surrounded by fynbos.  Last week Tokara presented their new releases at the beautiful Relais & Chateau Ellerman House. The winemaker is Stuart Botha, a 2006 graduate of Elsenberg Agricultural College who joined Tokara in 2017.  The talented Aiden Morton has been viticulturist since 2000.  Shown in the photo: Stuart Botha, GT and Anne-Marie Ferreira, and Aiden Morton.

Sauvignon Blanc with West Coast Oysters

The Wines

Tokara 2022 Sauvignon Blanc Reserve Collection Elgin Valley  92 Green tinged medium yellow. Beautiful mineral inflected Sauvignon Blanc. Super clean and focused with minerals  and notes of gooseberry. Sourced from seven clones of Sauvignon Blanc grown at 400-450m in the Elgin highlands. Cold pressed with only free run juice used for this bottling. 9% of wine fermented in used 400L oak barrels. pH 3.19, 13.2% alc. Exceptional value!

Tokara 2022 Chardonnay Reserve Collection Stellenbosch 92  Powerful bouquet of citrus, orchard fruit and minerals. Firmly structured palate, quite Chablis like in its minerality and reticence, needing a little more time in bottle to fully reveal itself. Sourced from a 350m high, south facing vineyard parcel. Matured in 38% new, seamlessly integrated French oak. Left on lees with battonage for 9 months; 50% malo.

Tokara 2020 Director’s Reserve White Stellenbosch 93 Light yellow straw. This wine shows minerals, lime leaf and hints of gooseberry and passionfruit. Medium weight with good depth of flavor on the palate. Excellent rich extract on a very long finish. A blend of 72% Sauvignon Blanc and 28% Semillon sourced from the decomposed granite, highest slopes (360-540m) of the Tokara estate. The free run juice from the best blocks is used for this bottling. Fermented in 25% new 400L French oak with battonage for 9 months. pH 3.31, 13.5% alc.

Tokara 2020 Cabernet Sauvignon Reserve Collection Stellenbosch 92  Dark ruby. Aromas of blackberries, cassis and tea leaf with cedar-like notes. Expansive fruit flavors on a full-bodied palate with firm, fine-grained tannins. Finishes dry with a sweet fruit aftertaste. Fremented in stainless steel and wooden upright foudres. Aged over 18 months in about 48% new French oak barriques.

Tokara 2020 Director’s Reserve Red Stellenbosch  93  Saturated dark ruby. Effusive aromas of cedar-infused spicy plum, dark berry and crème de cassis fruit. Well-proportioned, and tight and structured palate, attractively layered and fresh with good acidity and well-knit, still firm tannins. Youthful and needing additional bottle age to fully reveal excellent potential. A blend of 71% Cabernet Sauvignon, 13% Petit Verdot, 10% Merlot, 3% Cabernet Franc and 3% Malbec from the best blocks of estate vineyards on the Simonsberg Mountain. Cold macerated for 5 days followed by fermentation with ambient yeast in foudres and stainless steel tanks. Racked to barrel for malo and matured 22 months in 44% new French oak. pH 3.55, 14.4% alc.
